A little Easter Sweet Treat…

Happy Easter everyone!!!
Here I’ve got a little and super easy sweet treat idea for you, ideal to go with your after easter dinner espresso, but also with your afternoon tea or coffee.
All you need is Couverture Chocolate and Nuts for the base, then you can play with flavours.
My creations are: Dark and Milk Chocolate-Almond Praliné, plain or either Coconut covered or Chili dusted. As I enjoy the Dark Chocolate-Chili combination, I also added some Chili powder into the mix, then dusted them with more before they dried.

I think the quality of the chocolate is import, as it’s the main taste. Then I used Almonds, but it’s also delicious with different nuts and seeds or for example caramel pieces.

Jazz up your Easter Brunch…with my baked Porridge Bowl

I wasn’t sure how this baked Porridge with Smoothie Cream would work out. But it was really worth it!!
I started to crave for a colourful fruity breakfast bowl, after seeing Katrina’s delicious looking Breakfast bowls from The colourful kitchen .
I changed it a bit, by baking my oats. What I like about this dish is, that you can use the fruits and nuts you like or have at home and create your very own perfect Baked Porridge Bowl.
I mixed my Oats with Soy flakes, Berries and Nut cream and made a smoothie with Banana, Berries, Ginger, Seabuckthorn juice (Vitamin boost) and Soy milk and topped it with Banana, Pine Apple, Chia Seeds and Goji Berries.

It’s a tasty contrast between the hot Porridge and the cold Smoothie.

Quesadilla “Quesilada” and a cold Corona shouldn’t be missing

We still had some Tortilla leftovers from a Fajitas night…..the solution: Quesadilla.
Filled with crispy cooked Chicken, Corn, red sweet Peppers, Jalapeno and Cheese and served with homemade Salsa mexicana and Guacamole, and of course some Sour cream and a Cold Corona with Lime…
delicious! While catching the last bit of sun of the evening!

The Koolsla from the Coleslaws!

The past few weeks I craved Coleslaw for almost every dinner….so I started to create a new Coleslaw Recipe every night. This hearty salad goes well with so many different ingredients…celery, peppers, corn, bacon bits, apple slices, Nuts and Seeds…..etc.
This version is with an Avocado cream for a Dressing and a Coleslaw on a bed of Mung beans.
A luscious and fast made spring dinner!

Strawberry-Rhubarb Love with a creamy Apple Kiss

….those crunchy sweet “crumbles” on top of the sweet fruit combination of Strawberries and Rhubarb pieces, with this irresistible Apple Vanilla Cream…Sweet dreams come true. I think I have a new favorite dessert!

While I made the crumbles they looked just perfect…but what happened while I was baking them? Instead of keeping the shape of round crumbles, it all just melted to a nice and crunchy crust on top. Not really what I wanted, but at least it didn’t effect the taste.

Satay or Saté? Who cares….as long as it comes with Peanut Sauce!

Today we had some vegan Satay for dinner, with delicious marinated Tofu, a creamy peanut sauce, brown Rice and Salad. Of course you can also take Chicken instead of Tofu, if you prefer that. The preparation would be the same.
I like to make the Peanut Sauce out of Peanuts, but if you don’t have a grinder, you can also use Peanut butter. The sauce is a highlight! Even though, it’s very easy and fast prepared. You can make a creamy thick or a thinner sauce, depending on how much coconut milk you use.

A classic swiss sunday dinner

There are a few varieties of this dish, called Fleischvögel (Beef Rolls). The way the woman in my family prepared it and still do is this classic way.
They are filled with Mustard, Bacon, Carrot, Bread and Onions.
Good about it: The rolls can be prepared in advance. In Switzerland it’s a classic sunday dish, mostly combined with Potatoes (Mash or Gratin).
My grandmother used to make them, my mother prepares them and last year I started to cook them too. Younger people barely ever cook it….I guess because it’s one of those meals, you want to eat excactly how your mother always prepared it….so it’s easier to sometimes go home on sunday evenings to Hotel Mama and eat it there (where the food tastes best anyway, right?!). But when it comes to traditional swiss cuisine and meat dishes, it was in my interesst to start cooking meals like that, since it is Mr. Lovestones favorite cuisine…. and we all know: The way to a man’s heart is through his stomach.

Two great and loving people that are always interested in good food and truly know how to cook! Thank you for following this blog. I miss you two very much! Bruschetta Bruschetta!

Warm roasted, crunchy bread with a fresh summer topping…Bruschetta! Sometimes it’s just Olive Oil, Garlic, Salt and Pepper, sometimes Tomatoes and Basil….my Recipe include Avocado, Olives and Buffalo Mozzarella. We eat it a lot and everywhere….while we are sitting in town having Apero, at home for a summer dinner, at parties or as an appetizer….simple, fresh and good.

If it’s grill season, the best you can do is to roast the bread on the grill. Just rub a peeled garlic glove on the bread slices, dribble some olive oil over it and roast it over the fire….if the grill is still out, the oven will do the job.
This Recipe tasts also great with Feta or Blue Cheese instead of Mozzarella.
For this time I took a nice Buffalo Mozzarella, very soft and smooth, that gives the topping a creamy note.
