150g crushed Almonds
350ml Apple juice
100g Sultanas or dried Cranberries
500 g Canning Sugar 2:1
1 Vanilla bean
1 Tsp. Nutmeg
1 Tsp. Cinnamon
Peel the apples, remove the core and cut them in little pieces.
Crush the almonds and roast them in a pan without Oil.
Take a high pot and add the Apples, Apple juice, Sultanas, Canning Sugar, Cinnamon, Cardamom and Nutmeg. Cook it for about 10 Minutes.
Half the Vanilla Bean and scratch out the Vanilla.
Then add the Vanilla and the Almonds to the pot and cook for a few more minutes, stir once in a while.
The Jars have to be washed out well with hot water just before filling them.
Fill the Jars with the Jam. Close them well with the twist off cap, then turn the jars on the cap and let them rest like this for at least 5 minutes.
