Apple Cinnamon Cupcakes

makes 24 mini or 12 normal size cupcakes

For the batter:

3/4 cup of flour
1/4 Cup grated Hazelnuts
2Tbps cinnamon powder
1 Pinch of Salt
2 Tsp of Baking powder
1/4 Cup of milk
1/4 Cup Apple juice
1 Egg
1 cup of sugar
1/2 cup of vegetable oil or butter

For the Apple filling:

3-4 Apples
1/4 cup sugar
1 Cinnamonstick
1/4 cup water
one piece of butter (about 2.5oz)

Mix all the ingredients from the batter. Stir it for a while until you reach a smooth mixture

Then prepare the Apple filling. Peel the apples and cut them in little pieces. Put them with all the other ingredients besides the butter in a pot and heat it up. When the water is almost evaporated, add the butter and cook the soft apple pieces in the butter for about 5 minutes.

Fill the cupcake cups 1/3 with the batter. Then put some cooked apple pieces on top. (little cupcakes about 1 Tsp.full, big size: 1 Tbsp full) Finish with an other layer of the batter.

bake the Mini’s for 15-18 minutes, the big ones for 20-23 minutes by 400F/200°C

Frosting:

1 cup of Butter
1/4 cup caster sugar
cinnamon powder

Mix the butter with the powder sugar until you have a smooth mixture. You are ready to frost your cupcakes as soon as they are cold enough.

Ps: So presentation and combination is a sensation: drip some caramelsirup over the frosting….to bad I didnt have any for the moment 😉
