4 Portions
3 Chicory heads
2 half blood Oranges
8g fresh Ginger, grated
2 Tbsp. Brown Sugar
2 Tbsp. dark Balsamico vinegar
4 Tbsp. Olive Oil
1-2 Tsp. Smoked Salt (or normal Salt)
Preheat the Oven to 355F/180C
Cook the Chicory heads for 2 Minutes in boiling Water, take them out of the Water and half them. Place them in a Gratin dish.
Peel the Oranges and fillet them
Don’t know how to fillet the Orange? –>
Place the Orange pieces on the Chicory.
Now mix in a bowl: grated fesh Ginger, Sugar, Salt, Vinegar and Olive Oil
Poor the Sauce over the Oranges and Chicory.
Bake everything for 10-15 Minutes.

thank you! my grandmother used to wrap the chicory with cooked ham and baked it in the oven with a bit of cream and grated parmesan. before you bake it, you also blanch the chicory for 1-2 minutes in water. a very easy and tasty side dish.
