Peanut butter – Jam cupcake

makes 24 mini or 12 normal size cupcakes

For the batter:

1 cup of flour
1 Pinch of Salt
2 Tsp of Baking powder
1/2 Cup of milk
1 Egg
3/4 cup of sugar
4 Tbsp of Peanut butter if you ask me you can’t overdo with the peanut butter 🙂
1/2 cup of vegetable oil or butter

Mix all the ingredients from the batter. Stir it for a while until you reach a smooth mixture
Fill the cupcake cups 3/4 with the batter.

Bake the Mini’s for 15 minutes, the big ones for 20-23 minutes by 375 degrees F (190°Grad)

Make a hole in each cupcake and fill them with your choice of jam or jelly….I prefer black cherry jam. Then put the cake top back on after filling.

Now they are ready for a frosting:

1/2 cup butter
4 Tbsp. Peanutbutter
1/4 cup caster sugar

Mix a smooth mixture….Frost and enjoy! Mmmh…with this cupcake you must go Nuts!!!
