Mini Mississippi Cake by Betty Bossi

Ingredients for 10 Mini Cakes:

2 Tbsp. of warm Water
2Tbsp. of Instant Coffee
175g of soft Butter
1dl Cream
4 Eggs
250g of Sugar
1TL Vanilla Sugar
1 Pinch of Salt
50g of Cocoa powder, unsweetened
50g of Chocolate Powder (normal sweetened)
250g Flour
1 Tsp. of Baking powder
For every little cake form you take one chocolate bar. I took “Torino” for mine.

Preheat the oven to 180C°

Mix the Coffee and the water together.
Stir Sugar and Butter in a bowl. Add Vanilla Sugar and Salt. Then add and stir the eggs one by one. Add Cocoa Powder and chocolate powder to it. In an other bowl you mix the baking powder with the flour. And in a glass you mix the cream with the coffee.
Add the flour and the coffee cream alternately to the mix while stirring.

Fill the little forms 1/3, then lay a chocolate bar (or like in my case half of one) on top and fill in another second third.

Bake them for about 25 minutes

When the cakes are cooled off you can act out on your creativity…..make an icing, chocolate or sugar drops, write a name…what ever you like.
