Blueberry Vanilla Pancakes

Ingredients for 2-3 Portions:

1/2 Cup Buckwheat flour (Buchweizenmehl)
1/2 Cup Whole grain Spelt flour (Vollkorn-Urdinkelmehl)
3/4 Cup of Soy Milk
1 Tsp. Baking powder
2 Tbsp. Brown Sugar or Agave Syrup, Maple Syrup…etc.
2 Pinch of Salt
2 Tbsp Vegetable Oil
1 Vanilla Bean, scraped
1 Cup fresh or frozen Blueberries
Oil to fry

Make the batter for the Pancakes by mixing the two Flours, Baking powder, Sugar, Soy Milk, Vanilla, Salt and vegetable Oil. Mix it well. At the end you add the blueberries to it.

Heat up a little bit of Oil in a frying pan and make the Pancakes one by one, golden brown on each side on medium heat.

Tip: You like it sweeter? Take a Soy Yogurt, ripe Banana and a spoon full of Agave or Maple Syrup and puree them together, serve it to the Pancakes… mmmh…Gooood Mooorning!
