Vanilla Coconut Cupcakes

makes 24 mini or 12 normal size cupcakes

3/4 cup of flour
1/2 cup Coconut flakes
1 Pinch of Salt
2 Tsp of Baking powder
3/4 cup of coconut cream
1 Egg
1 cup of sugar
1/3 cup of vegetable oil or butter
1 Tsp. Vanilla extract

Mix all the ingredients. Stir it for a while until you reach a smooth mixture.

Fill the cupcake cups with the batter and bake the Mini’s for 15 minutes, the big ones for 20-23 minutes by 375 degrees F (190°Grad)

Frosting:

1 cup of butter
1/4 cup caster sugar
1/3 cup Coconut powder concentrate (or flakes)

Mix the ingredients until you have a smooth mixture. You are ready to frost your cupcakes as soon as they are cold enough.
