Guest post: Avocado- Tomato Dream Team

As I promised, here my first guest post from no one less then my mother. For the new years eve dinner she prepared a beautiful Buffet for 16 hungry people. Two of the recipes I would like to share with you, as they are simple and fast to make but are a little star, when it comes to tickle your taste buds.
And…my personal opinion: Little scrumptious food combinations in small classes make me happy just to look at.
This is a great option for a Buffet or also as an appetizer.
For me there is no better cuisine then cooking with simple high quality ingredients. And the combination of sweet Cherry Tomatoes and creamy rich Avocado just scream to be eaten together….at least in my head (common, Avo-Toast with Tomatoes and cracked Pepper- who doesn’t get a kick out of this 2 Minute prep. meal)

Spring time is salad time……soup recipes are leaving my mind and Salad ideas take in their place.

The Koolsla from the Coleslaws!

The past few weeks I craved Coleslaw for almost every dinner….so I started to create a new Coleslaw Recipe every night. This hearty salad goes well with so many different ingredients…celery, peppers, corn, bacon bits, apple slices, Nuts and Seeds…..etc.
This version is with an Avocado cream for a Dressing and a Coleslaw on a bed of Mung beans.
A luscious and fast made spring dinner!

Bruschetta Bruschetta!

Warm roasted, crunchy bread with a fresh summer topping…Bruschetta! Sometimes it’s just Olive Oil, Garlic, Salt and Pepper, sometimes Tomatoes and Basil….my Recipe include Avocado, Olives and Buffalo Mozzarella. We eat it a lot and everywhere….while we are sitting in town having Apero, at home for a summer dinner, at parties or as an appetizer….simple, fresh and good.

If it’s grill season, the best you can do is to roast the bread on the grill. Just rub a peeled garlic glove on the bread slices, dribble some olive oil over it and roast it over the fire….if the grill is still out, the oven will do the job.
This Recipe tasts also great with Feta or Blue Cheese instead of Mozzarella.
For this time I took a nice Buffalo Mozzarella, very soft and smooth, that gives the topping a creamy note.
