Emily’s Granola Bars (vegan)



1 1/2 Cups of whole grain Oats
1/2 Cup of popped Amaranth
1/4 Cup Non-dairy Milk
2 Tbsp. Cashew Cream (or Peanut Butter)
3-4 Tbsp. Agave Syrup
2 Tbsp. Coconut flakes
5 Tbsp. Pumpkin Seeds
3 Tbsp. Chia Seeds
1/4 Cup of Almond Slivers
Optional: A small handful of dark chocolate bits
Optional: Other Nuts or dry fruits like Goji berries, Raisons, Dates etc.

Preheat the oven to 200°C/400F

Mix all the ingredients in a bowl. Then spread it on a baking paper on a baking sheet.

Bake for about 30-40 minutes (or until golden brown). The bar is crunchy on the outside and soft in the inside.

Let it cool and cut pieces.
