Ingredients for 4 glasses:
200g Cream Cheese (I took low fat)
3 Tbsp. Mascarpone
1 small Greek Yoghurt
6 Tbsp. Caster Sugar
1 Vanilla Bean
12 whole wheat Cookies
3 Tbsp. Raspberry jam mashed with a few fresh Raspberries or just mashed Raspberries.
Fresh Raspberries
white Chocolate
4 Glasses
Split and scrape the Vanilla Bean and mix that well with the Cream Cheese, Mascarpone, Greek Yoghurt and Caster Sugar to one mixture.
Crumble up the Cookies in a plastic bag or in a mixer.
Fill some of the Cookie Crumble in each glass (2Tsp.) Then fill in the Cream Cheese mix into the half. Add a spoon full of the Jam-mix on top and again a spoon full of Cookie Crumble. Fill the rest of the glass with Cream Cheese mix.
Decorate with fresh berries and sprinkle grated white Chocolate on top.
Tip: You can also make an other fruit layer instead of Raspberries….such as other Berries, Mango, Pineapple etc. Just puree the fruit for the middle layer and decorated with little fruit slices.
Serve the Dessert chilled
Blog post:
Exactly one year ago this blog baby was born. Happy 1.Birthday!
After writing so many Recipes on paper and post-its for friends that asked me, after I have cooked for them, I knew there most be an easier solution. So my cooking passion led me to wordpress and wordpress led me to many youtube tutorial videos and (another) new food blog was born.
The only motto for this blog: Easy to prepare with fresh quality ingredients and recipe ideas mostly created by myself with influence from all over the world.
And with my blog journey the feedbacks came. Thank you for all the enthusiastic and of course also critical feedbacks (Some thought I was posting too much, for some it wasn’t enough, some people got irritated by vegan recipes, some wished for more meat dishes…..my conclusion: I think there is a Recipe for everyone).
And guess what? This blog and I will continue to surprise you with new and hopefully inspiring dishes to just look at or recreate.
Thank you for following or visiting my Blog!
My todays Birthday post: Fast and easy Raspberry Cheesecake in a glass.
