Antipasti Cornbread

Makes 1 big Cornbread or about 40 Mini Muffin Cornbread

Ingredients:

1 Cup of Cornmeal (Maismehl oder feine Polenta)
1 Cup of Flour (z.B. UrDinkel Vollkornmehl)
1 Tbsp. Baking powder
1 Egg
1 Cup of Milk (or Soy Milk)
1 Tsp. Salt
1 Tbsp. brown Sugar
1/3 Cup Vegetable Oil
10 Sun dried Tomatoes in Oil, chopped
10 black Olives, chopped
Basil, chopped

Preheat the oven on 200C°

Mix the Cornmeal, Flour, Salt, Sugar and Baking powder in a bowl. Then add the Milk, Egg and Oil. Mix well and add the Tomatoes, Olives and Basil to it, stir again.

Take a round cake form or a Muffin tray and grease it.

Fill the batter in the form.
The big cake form takes about 50 minutes. The Mini Muffins take about 20 minutes.
