2 cups of flour (I took whole wheat spelt flour)
1/2 Cup of Coconut, fine grated
1/2 Cup of Almond Slivers
1 1/2 Cups of Brown Sugar
1 Tsp. Baking Powder
1/2 Tsp. Salt
1 1/2 Sticks of Butter or Margarine (175g), softened
2 Eggs
200g white chocolate
1 cup of frozen Blueberries
Preheat the oven to 345F/175°C and grease a baking form (you can use a 20cm square tin….I didn’t find mine and took a round one. Works, as long as it is a shallow one….its not a cake 🙂 )
Mix the Butter/Margarine and the Sugar to a foamy mixture. Then add the Eggs and continue mixing.
In an other bowl you mix Almond Slivers, Coconut, Flour, Baking Powder and Salt. Now add the dry ingredients to the others while you continue mixing.
Break the white chocolate in pieces. I always put them in the freezer in a plastic bag, then hit them with a pan or rolling pin to small pieces.
Add the white chocolate pieces and frozen Blueberries, stir well (until you have a nice purple dough) and fill it in a greased baking form.
Bake for 30 minutes.
Let it cool and cut squares
