Ingredients:
2 Zucchini
6 Leafs of Sage
2 gloves of Garlic
1 Onion
6 Eggs
1/2 Cup of Soy Milk (or regular)
Salt
Pepper
Paprika
Oil
Grate the Zucchini. Chop the Onion, Sage and Garlic.
Cook the Zucchini, Garlic, Sage and Onion in a little bit Oil in a frying pan for a few minutes, Salt and Pepper it and add some Paprika powder.
Mix the Eggs with the Milk and salt the mix a little.
Poor the Egg mix in the pan and mix everything. Then let it cook on medium heat for about 10 minutes covered with a lid (until it’s not runny anymore), then turn the Frittata and cook it an other 5 minutes on the other side.
You can serve it warm or cold, as a side dish or at a finger food buffet.
