For 4 People:
2 Cups of Green Lentils
1/2 Avocado
7 cup of Sundried Tomatoes
1 yellow Pepper
1 Onion
a handfull crushed Cashew Nuts
Dressing:
1Tbsp Souer cream
1Tsp Mayonnaise
1Tsp Mustard
3-4 Tbsp Olive oil
1-2 Tbsp Vinegar (I prefer white Balsamico)
a little chili powder
Salt
Pepper
Cover the lentils in a Pot with water. Cook them, until they’re soft. Prepare the salad dressing in a salad bowl, by mixing all the dressing ingredients and stir them. Chop the onion and cut the pepper and tomatoes in little pieces. Cut the Avocado in larger pieces and add all of it to the Dressing. After the lentils cooled down you can add them and the Cashews to the bowl and mix all of it. Season to taste.
Tip: For an extra special: Decorate the salad with some pomegranate berries
