Pumpkin Spice Cupcakes

makes 24 mini or 12 normal size cupcakes


For the batter:

1 Cup of Flour
1 Pinch of Salt
2 Tsp of Baking powder
1/3 Cup of Milk
2 Egg
1 Cup of Sugar
1 1/2 Cup Pumpkin Puree
1/3 cup of Vegetable Oil or Butter
1Tsp. Nutmeg
1Tsp. Grated Ginger
1Tsp. Cinnamon
1Tbsp. Cardamom

Mix all the ingredients from the batter. Stir it for a while until you reach a smooth mixture.
Fill the cupcake cups 3/4 with the batter.

Bake the Mini’s for 15 minutes, the big ones for 20-23 minutes by 375 degrees F (190°Grad)

Cream Cheese Frosting:

100g Cream Cheese
200g Butter
1/3 Cup Caster Sugar
2Tsp. Cinnamon

Mix a smooth mixture….Frost and enjoy!


For this time I made little leaves, Pumpkins and Pies from Marzipan and Fondant.
