Ingredients for the Tofu skewers:
250g nature Tofu
1 piece of Ginger
1 cloves of Garlic
1 Onions
1 Tbsp. Coriander seeds
1-2 Tbsp. Chili paste or 1/2 chopped fresh chili
3 Tbsp. Coconut milk
4 Tbsp. Soy Sauce
Ingredients for the Peanut sauce:
1 Cup roasted peanuts
1 fresh Chili (or 1 Tsp. Chili paste)
1 Cup Coconut milk
2 Tbsp. Peanut oil
2 Tsp. Lime juice
2 Tbsp. Soy sauce
1 Tsp. Coriander powder
1-2 Tbsp. Brown sugar
Cut the Tofu in pieces and put them in a bowl. Grate the ginger and the Onion, chop garlic and the chili and add all of it to the bowl with the coconut milk and the soy sauce. Before you add the coriander seeds, pestle them in a mortar.
Mix it and let it marinade in the fridge for a few hours.
For the Sauce: Grind the Peanuts in a mixer. Put it in a little pan and add the oil, chopped chili and coconut milk. Heat it up slowly (it should not cook). Then add the sugar, soy sauce, coriander and Lime juice. Stir it to a creamy sauce. Season to taste.
Then take the marinaded Tofu and grill or fry them (with Peanut oil) until they are brown. You can put them on skewers or serve them like that.
Perfect to serve on a buffet, as appetizers, at a BBQ or with rice and wok vegetables.

Tip: You can also use peanut butter instead of whole peanuts. Add less sugar and less soy sauce to it then.
