Red Lentil Dal

For 4 people

Ingredients:

1 1/2 cups red Lentils (this type of lentil is cooked very fast)
2 Tbsp. Sesame oil
1 Onion
2 cloves of garlic
1 piece of Ginger
1 red Chili
2 Tbsp. coriander and fresh coriander
2 Tbsp. cummin
1 Tbsp. curcuma
(2 Tbsp. Garam Masala, if you have it, it’s not a must though)
1 1/2 cups Coconut milk
Vegetables of your choice. I added Butternut Pumpkin
Salt
Pepper

chopp up the garlic, onion and red chili.
Roast them in the Oil in a big pan, grate the ginger and add it. Now you can also add some seasonal vegetables of your choice if you like. My Winter favorite is adding butternut pumpkin.
Now add the Lentils and the coconut milk, stir it.
Season it with the coriander, curcuma, salt, pepper, and cummin to your taste.
Let it cook for about 15 min until it’s a mushy dish. Don’t forget to stir it now and then, so it doesn’t burn at the bottom.

chop up the fresh coriander and sprinkle it on top before you serve it.

This vegan Recipe goes very well with rice or Naan bread and you can combine it with the vegetable you like..

Tip: Garam Masala is a blend of spices. Some ingredients are on my spices list on the top already. The blend includes also cardamom, cinnamon, clove and sometimes fennel seeds. If you can’t find the spice mix, you can also buy the different condiments and pestle it before adding.
