Ingredients for 2 breads:
1kg/2.2Ib White Flour (Our special “Zopf-Flour” is white flour 90% Wheat, 10% Spelt)
1 Cube fresh Yeast (42g)
1 1/2 Tbsp. Salt
2 Tsp. Sugar
6dl/2.5 Cups Milk
200g/ 1 Cup melted Butter, cooled off
Preheat the oven to 200C°/400F
Mix the flour and Salt in a bowl and make a hollow.
Mix the Yeast with the Sugar and 1 Tbsp. Milk.
Mix the Milk with the melted Butter. Then add the liquid Yeast and the Milk-Butter mix to the flour.
Knead for about 20 minutes until you have a smooth dough. Then let it rest in the bowl covered with a wet towel by room temperature for one hour.
Take the dough out of the bowl, knead it one more time. Then split the dough and weave two braids.
Lay them on the baking paper on the tray and let them rest again for 15 Minutes.
Whisk the egg and brush the egg on the breads.
Bake the braids for 50 minutes.
