Happy 1.Blog Birthday!

Exactly one year ago this blog baby was born. Happy 1.Birthday!
After writing so many Recipes on paper and post-its for friends that asked me, after I have cooked for them, I knew there most be an easier solution. So my cooking passion led me to wordpress and wordpress led me to many youtube tutorial videos and (another) new food blog was born.

The only motto for this blog: Easy to prepare with fresh quality ingredients and recipe ideas mostly created by myself with influence from all over the world.

And with my blog journey the feedbacks came. Thank you for all the enthusiastic and of course also critical feedbacks (Some thought I was posting too much, for some it wasn’t enough, some people got irritated by vegan recipes, some wished for more meat dishes…..my conclusion: I think there is a Recipe for everyone).
And guess what? This blog and I will continue to surprise you with new and hopefully inspiring dishes to just look at or recreate.

Bananice! A few vegan “Ice Cream” Ideas

Finally I made some delicious vegan Ice cream. As I don’t have an Ice cream maker, I wanted to try this one-ingredient Dessert with soft ice consistency for a long time. And it works!!! Low Fat, No dairy and great taste. All you need is frozen bananas…..and a blender.

My 3 creations for today are Coconut-Pineapple Bananice, Peanut butter Bananice and Chocolate-Caramel Bananice….as soon as you’ve prepared the base you can make your favorite ice cream, by adding caramel, vanilla or chocolate, different fruits and Nuts and voila! In less then 5 minutes you’ve made your favorite ice cream!

Summer Salads for Summer days!

Finally I am back on Blog track….but I do have a good excuse. I went on a Trip to Turkey! Which was mind blowing! And of course I will soon post a little something about the culinary highlights I experienced in Istanbul and Antalia.
But for now: I promised you the creamy vegan summer salads I had with my Turnip Cabbage Schnitzel.

Turnip Cabbage Schnitzel – my at-the-moment favorite Side Dish

These vegetable Schnitzel and a good Salad with it and I am the happiest! I made them GLUTEN FREE, but of course you could also use normal flour and normal bread Crumbs.
We had them with an vegan indian Carrot-Chick Pea salad with “Yogurt”- Dressing , some Cucumber Salad with Dill and the Zucchini Sage Frittata, that I posted this week. The Salads will follow soon!
Enjoy these Schnitzel fresh from the pan, while they are warm and crunchy.

Cloudy with a chance of Meatballs!

I am surrounded by Meatball-loving People! The secret is in the spices, that makes them soooo delicious. And also a good quality of ground beef (organic) and of course to cook them on a high heat, so all the juice stays in the meat and you don’t end up choking on dry Meatballs. From then on it is up to you, how you want to serve them….just like that (maybe with a Hummus or Tzatziki Dip) or with Pasta (and Tomato Sauce) or maybe with Gravy and Mash….? Your choice!

Wrapping the Wraps in Curry Heaven

I love to make Wraps for Partys as a finger food, by cutting small pieces and placing a thooth pick in the middle of every piece. Wraps filled with Tuna Salad, Shrimp Cocktail or the ones I made today: Chicken Curry, with red Pepper and sweet Corn and a Creme fraiche Cream. Mmmh! Yummie! They look nice and taste great and you can prepare the Wraps in advance. But also as a dinner or lunch meal, it’s a good idea, fast prepared and sooo tasty.

Today I received a request to make those Curry Wraps again, after seeing me preparing them for the Party. This time for sunday dinner….well in that case: Your wish is my command!

It’s sunny, it’s warm and it’s time to enjoy la bella vita! Here a simple but yummie Appetizer/Apéro idea: marinated Tomato-Mozzarella Skewers. Marinated with a paste of fresh Basil, Garlic, Olive Oil, Pepperoncini and Pine Nuts.

Searching for the eggs on Easter Sunday…..

For the Easter Dessert I made a classic Lemon Pie. The Lemon curd is easy prepared and you can make it days or weeks in advance. I bought the pie crust…*shame shame* and forget the Eggs!!!…
Lucky me, when I saw, that I still had two eggs left in the fridge. Two! That doesnt make a great big layer Meringue….
All in all a great Pie. Even with a thin layer Meringue. And about the bought crust….pssst, it’s our little secret!
