I live next to a little Tea store with a red door. The owner is a very funny man from England. Outside of his little shop he has a little round table, where he sits most of the time on not rainy days, smokes a cigarette and drinks…..wait for it! Coffee.
As I do enjoy some Tea once in a while and live next to this shop, I went to ask for this green Matcha tea, after reading and hearing so much about the new trend.
A little shocked about the Matcha prices, I took the free samples first, but soon returned to buy some of this poison-green treat! Delicious with a little water and soy milk I started to enjoy my Matcha every morning, just as I used to drink coffee. Today I am equipped with everything you need to make a nice foam on the Matcha Tea (thanks to my brother).

I have heard the question: “But don’t you just want to press the button, sit down and drink your coffee. This Tea takes too much time in the mornings…
I do see that point. To make a matcha, takes me about 3 minutes. About 2 Minutes and 50 seconds longer then to make a coffee with a coffee machine.
Preparation belongs to the joy of drinking and eating. So no, 3 minutes for my daily morning Tea is just fine.
I found this video how to prepare the matcha tea traditionally…..that’s noooot how I do it 😀 I have respect for this perfection. Have a look:
Here some facts about this tea:
Matcha is a green Tea from Japan and means milled tea. It’s full of Catechins, vitamines and antioxidants.
4 weeks before they harvest the leaves, they shade them. This is the reason for the intense green. Then the leaves get steamed and dried and stone- ground.
It takes up to one hour to grind 30 grams of matcha.
For one bowl or cup of Matcha you take 1-2g powder. Then heat up the water (or water- soy milk to make a “Matcha-Latte”). When it boils, take it off the heat and wait. The water should be arround 80°C. Poor water to the powder and stir it well. With the bamboo brush (Cha-sen) you can stir it very easy and make a nice foam.
If you buy the tea, be carefull with the quality and be sure it’s organic.
The real matcha taste is “umami”, the 5. sense of taste.

I had this nice idea one day to make delicious Salmon Blinis, dreaming of a fluffy dough with tasty smoked Salmon and a rich Horseradish Cream….
So, I made the Blinis….not an original Recipe, but just the way I thought it would taste delightful. And…delightful is definitely the wrong word…they were dry and hard and not really fluffy at all….more like a chewy frisbee…
Time to win this Quest against myself and the Blini dough….
I won and finally made a batter that became as fluffy and delicious as I wanted it to be and that I wanted to share with you all. The Salmon Blini Recipe is under “Apero”.

By the way: Blinis are russian Pancakes and usually made with Yeast….

The perfect snack to bring to a Party. I filled it with Ricotta, grated Cheese, Olives, Basil, Pesto and sun dried Tomatoes. But you can add so many things to it…..roasted Pine Nuts, Chorizo pieces, diced Artichoke hearts, garlic etc….create your own Antipasti Cake for your next Party!

Merry Christmas everyone!!!! Here a little (and late) Christmas gift Idea…or just a nice recipe for a Winter Brunch…..
Mmmh, I looove baked apples, with Nuts, Vanilla, Cinnamon, Nutmeg, Cardamon….the lovely smell of winter from the oven. So, this year I made this Jam as a christmas gift….
I didn’t bake the apples, but the mix of all those wonderful delightful ingredients become a baked apple taste….

I don’t have too much experience with Jam making and I have to say, the Jam was more liquid then I expected it to be, more like a Honey consistence, but the smell and taste is exactly what I wished for….
Someone told me, that I should just reheat it, to make it thinker…(?) I’ll try that next time.

It’s almost time! And Christmas is nocking on our doors! While you prepare a big delicious christmas dinner in the kitchen, you might want the people to snack on something small with their wine or champagne, before they sit down at the dinner table….something that looks good and taste good but isn’t a whole lot of work. Those little Tartelettes (Mini Pie Crusts, you can buy them at the normal supermarket in Switzerland) are great to fill with whatever you desire….Tuna Cream, Egg Salad or what I did this time…marinated Shrimps with Avocado Cream. Fast and Easy as I promise!

Mini Gugels, coming from “Gugelhupf”, also knows as: Gugelhopf, Napfkuchen, Topfkuchen, Rodonkuchen or Bundt cake – usually in a big Bundt Form, and mostly a simple dough with raisins. I got me one of those Mini Gugel Forms….to make one-bite-size Gugels. You can fill the hole with chocolate sauce, cream cheese filling, butter cream filling or icing and decorate them the way you like.

I decided to make vegan Vanilla Coconut Gugels, but the variations are endless! Bake them only 11 minutes in the oven, to keep them moist and soft. The perfect sweet treat for you and your friends with coffee and tea or bring them to your next party…they will love’em

Mmmh….the smell of cumin and coriander, curcuma, pepper, cinnamon, cardamon and garlic in my kitchen….I’m a fan of those oriental spices and ingredients. Time to use them for the next dish…..Oriental Golden Millet Cakes with Baba Ghanoush.

Golden Millet is very healthy and has lots of iron, calcium, magnesium and silicon and is great for our bones, joints, skin, hair and nails. And the best for a fast cooking: It only takes 15 minutes to cook.
Baba Ghanoush is an easy made Eggplant Dip. Usually it contains lots of Olive Oil. Of course I do love the creamy, rich, tasteful Baba Ghanoush, but for tonight I wanted a light version. 2 spoons of Soy Yogurt and 1 small spoon of Tahini made it wonderful creamy….this and a Salad and dinner is ready!
