This post is not about a new Recipe.
March 2014, while visiting my friend in Holland, I prepared them for the first time. Since that day I have made these Breakfast Baskets so many times. Sometimes I changed the Cheese, using Parmesan or Goat Cheese, sometimes changed the Seasoning or herbs or used Bacon bits instead of Ham.
Two months ago I hosted a big Brunch at my place. This time I prepared them in the Mini-Cupcake tray. Of course the normal eggs were too big for the Mini’s, so for the first time I bought Quail Eggs – the perfect egg for this little Breakfast Basket.
And once again this Recipe was so much enjoyed and mentioned.
Last month I read about a cooking contest and entered it, and now guess what?!? I won with this Recipe!
I definitely have made dishes that appear better-looking then this one, but at the end this is a little uglylooking-but-yummie star!

This morning spring was in front of the door and I decided to jazz up our brunch with yummie Breakfast Baskets, filled with Ham, Egg, Onion, Cheese, Creme fraiche and Chives – A lovely dish for a brunch: Looks cute, tastes good and can be prepared a few hours in advanced, before you bake them.
Only 12 minutes in the oven, and the yolk is still runny in the middle and blends with the creamy filling of the crunchy pastry….

Recipe:
Ingredients for 2 Baskets:
2 squares from a Strudel dough or Puff pastry
4 cooked Ham slices, cut in small stripes
2 Eggs
2 Tbsp. Gruyere Cheese or other salty Cheese (also delicious with hard Goat Cheese), grated
1/2 Onion, chopped
2 Tsp. of Creme fraiche
Chives, chopped
Salt
Pepper
a Pinch of Cayenne Pepper
2 Tbsp. Oil
Butter to grease the form
1 Muffin tray
Preheat the oven to 200°C/400F
Grease the Muffin tray with butter
Cut 2 squares from the dough and place them into the muffin form.
Heat up a frying pan with the Oil and cook the Onion and the Ham stripes for a few minutes until lightly browned. Then add the Creme Fraiche, Cheese, Salt, Pepper and finish with the chopped Chives.
Now fill the filling into the dough baskets.
Carefully place an Egg on top, Salt and Pepper it.
Bake the baskets until the dough is golden brown (takes about 12 minutes)

Total witzig, ich mache diese Frühstücksmuffins ebenfalls seit Jahren (auch zur Rose dekoriert), entweder mit ganz kleinen Hühnereiern oder mit Wachteleiern und wäre nie auf die Idee gekommen, dass man damit Preise gewinnen kann – Herzlichen Glückwunsch 🙂
