My significant other gave me a beautiful cook book called “Vegan Love Story” by Tibits and Hiltl. Last month friends came over for dinner and we tried 8 different dishes from that book. I love how they play with interesting new spices and textures.
The first Recipe i will share, I’ve already made 4 times. Speaks for it self, how good and easy it is and it’s the perfect gift or Snack to bring to a Party.
Salty Rosemary Nuts with Cranberries, roasted and glazed with a delicious sauce of Soy Sauce, Oil, Sugar and Salt
2 Tbsp. Olive Oil
1 Tbsp. Salt
1-2 Tbsp. Soy Sauce
1 Tbsp. Brown Sugar
100g peeled Almonds
100g unpeeled Almonds
100g Cashews
1-2 sprigs of Rosemary
50g dried Cranberries
Preheat the Oven to 355F/180°C
Mix in a Bowl: Olive Oil, Salt, Soy Sauce, Sugar
Then add the Nuts and the Rosemary Needles and mix it all well.
Poor the mix on a baking paper on the tray and bake in the oven for 10 minutes.
Set the tray aside to cool off and mix everything with the Cranberries.
You can serve them right away or later when they’re cold
