Delicious Aubergine Bites

Yes, I do love eggplants. And some of you also know my Eggplant pocket recipe as a side dish. In This Recipe Goat Cheese, fresh Basil, Walnuts and Ricotta are processed into a delicous paste and wrapped with smoked Ham and Aubergine.
You can eat them cold or put them 10 minutes into the oven before serving and enjoy them warm.
